I've got a '68 2000 project and have noticed a lot of '67 parts around. Other than the tall windshield issue, is everything else pretty common?

Drivetrain, yes, there is a lot of commonality there - the differences would be related to the smog plumbing and the changes associated with that (it alters the water pump mounting and the pulleys). Body wise, most of it can be made to work. Interior - very little.

The fenders on the 67 to 68 are different were the 68 and 67.5 had a larger fender flare.
The 68 is when the started using a full vacuum formed dash.
The center console is a bit different too where the radio is dash mounted on the 67 while the 68 is vertically mounted in the center console.

Sid has it pretty much right- for the most part there is not a lot of body parts that are interchangeable. You can use later fenders if you install later door pillars and such. In the interior, just about nothing is transferrable as the dash, seats carpet layout, center console, door handles- pretty much everything is different.
Drive train parts are pretty much interchangeable.

Trunk lids should be interchangable through for all 1600/2000. Hood can be swapped; may need to modify latch or prop. Grilles all swap, as do bumpers (slight differences in rear bumpers), overriders, tailights (wiring might be different), headlights (I believe) and scoops, etc.
Early/late 1600 engines can be swapped but there are differences between smog/non-smog cars, notably water pump and spacer, fan shroud, motor mounts (driver's side alternator mount). These parts can all be swapped between engines though. Transmissions can be swapped.
