Hey hard would it be to reposition the leaf springs further inward for wider tire clearance? Say 2 inches?
And what would happen to the ride, sway and handling if this is done?

I'm not sure that moving the leaf springs inboard 2" will give you 2" of additional tire clearance. The inner fender and frame rail will also have to be moved inboard...a lot of work, but more power to you if it's what you want to do. We all have our own projects, both great and small.
As for ride and handling - moving springs inboard won't affect ride too much. It will change handling, as your roll stiffness in the rear will be reduced. This will generate more understeer. Roll will be s increased as well. The extra roll and understeer could be compensated for by adding an anti-roll bar in the rear.
