Re: oil change
I think the steel oil pan holds 5, the normal aluminum pan holds 7 and the deep aluminum pan is 7.5+

Sorry, I find modern engine swaps revolting. Keep your G, R, or U series in your Roadster!

From the manual: http://www.311s.org/PDFs/U20Eng_TrnService%20Manual.pdf
SU 4.33 quarts (plus filter volume), 7.5 quarts (plus filter). And check your steel oil pan for any dents that may make the dipstick inaccurate. All of my cars have dents in the oil pans...ugh

Re: oil change
After putting in what you think is right "At least 4.3 quarts. Do not start the engine. Roll/move the car to flat ground. Pull the oil dip stick . wipe it off, put it back in fully and them pull it out and get a reading.
.
If it is low add another 1/4 and check again. Repeat adding oil, wiping and checking until the oil is near "H" or the top horizontal marking.
.
At that point start it up and let the engine run for a minute and check again. It may show a tad lower than the high mark but it should be pretty close.
Sometimes it can take a little time working its way back to the oil pan.
