I will start off the southwest region with some of my favorites:

New Mexico:

North Highway 14, "The Turquoise Trail" this road runs from the canyon east of Albuquerque north to Santa Fe, you can also turn off and head up to Sandia peak (Elevation 10,300) The views are amazing and the roads are well maintained and twisty. http://www.turquoisetrail.org/

Highway 337 (South 14), South (of I-40) portion of the above road, very twisty, lots of hairpins In the first few miles, I haven't been much further past that.

Arizona:

Highway 89,This highway connects Wickenburg to Prescott, it is very twisty and provides some nice views. A great road to take to escape some of the Phoenix summer heat.

Highway 87, This is another road out of Phoenix/Mesa, that connects to beautiful Payson, AZ. It is a pretty good climb, so make sure your cooling system is good to go during the summer, fairly twisty, great views.

Highway 260, This road runs from Payson to Heber, has lots of pines and hills, a great way to explore "rim country" in a roadster.
