Suggestions for restoring the cooling system

Hi Guys,
I've just started the process to install a complete new exhaust system from the headers to the tail pipe on my wife's 1967 1/2 1600.
After removing the old headers and the intake manifold, it became obvious that the cooling system needs to be cleaned and refurbished. I've ordered new (braided) upper and lower radiator hoses, and I have a new intake manifold water tube and shield. I purchased the stainless steel water pump and cylinder head nipples. I'll remove the radiator and have it flushed. I'll take a look at the thermostat and housing, too.
Any general suggestions will be appreciated. One specific item that I'm interested in is the water that flows through the intake manifold. Do I use a pressure washer to clean out the old gunk?
Finally, below is a photo of one of the heater fittings -- it has been soldered or braised over the years. Are there replacements for these, or similar ones without the "shut off" handle?
