Restoration shop recommendation - SE area (New Orleans)

Hi everyone,
As I'm about to turn 50 soon, I decided it is time for me to get my 1969 Datsun 2000 restored so I can start to enjoy it while I still have the energy. I'm located in the New Orleans area and have been having trouble finding people comfortable working on these Japanese cars.
My baby is in pretty good shape. Always garage kept. I'm the 3rd owner. But it does need some TLC (brakes replaced, engine fluids replaced and tuned up, transmission rebuilt, top replaced... things like that). I would love to do a frame off restoration but I also need to be mindful of finances as well.
