Are the headers to close?
Do you think I need to get a shorter starter? The header is crazy close and worried that I am going to burn it up.

I would say so. I’m guessing here, but the manifold looks new, so in the future when you need to change the starter out you will need to pull the header, which will need a new gasket. Might be best to swap in the short starter now while the gasket is new.

You might want to send Dean (Datsunparts.com) a PM and see if he can hook you up with a new Gear Reduction Starter.
Pic is of the one I got off of him compared to the original. It was a big improvement.

If you look up the model number these have been used over several different makes of cars, Nissan, Mitsubishi, etc. readily available fer about $50 online, EBay. Has worked flawlessly for several years. Gear reduction is way to go.

Those foil covered asbestos / fiberglass shields on 95 ish Japanese cars can reduce heat transfer to a big extent ...at least for a short time ,I'd try one from a salvage yard
