Since Solvang, Shasta, Road Atlanta and such have been cancelled, what about looking towards events later in the year? For example, there is an HSR race at Road Atlanta in October:

I only looked at HSR and only in the southeast, but you get the point. I believe that Watkins Glen is still on (I hope so), so that is one as well.

Limerock Historics are still on as of now. It's Labor Day weekend so who knows. Other races have been cancelled or rescheduled but check website for updates.
