Visiting SanDiego, New Orleans, driving 9 days to Ft Lauderd

Visiting from Australia!
In mid February 2014, we are visting the USA, first SanDiego CA from 17 th to 22nd, then flying to New Orleans for a few days, being tourists and visiting MardiGras, then taking a Missisippi riverboat up and back , then around the 7th March, we are hiring a car, and have 9 days to meander our way via Louisiana, Alabama, Georgia, then on down to Ft Lauderdale, where we are on a 14 day Carribean dinghy boat trip.
We eventually end up after that, flying to Las Vegas, for five days, April 1st to 5th.
What i'd like to find out, is, what should we try to look at, or visit?
What is on?
San Diego Feb 16-22 nd?
New Orleans Feb 23-27th?
The nine day drive from New Orleans to Ft Lauderdale, March 7-15th? ( hiring a 2014 Camaro or Dodge!)
las Vegas April 1-6th?
We both, ( my dear wife, of 25 years!) enjoy the off beat interesting or quirky things, i love my cars, she painfully puts up with me!
Car shows, museums, collections, etc
Am liking the idea of visiting some race tracks, hiring a decent car, and doing a few laps
( i have raced plenty here in Australia, for some 30 years!)
Any suggestions, advice, recommendations, very mch appreciated!
