This is awesome. I had the same idea and have even purchased the 2000 thermostat spacer, temp sender, and outlet. I also have a 2000 radiator so it's great to know that this mod actually works. Dave P and I talked about doing it for the exact same reason - the exhaust port being so close to the 1600 temp sender causing it to read falsely high. Do you have photos of your new setup?

+1...yes,....it does work awesomely.... I have the U20 thermostat housing and outlet with the temp gauge sensor mounted there, and also using a 2000 radiator, with 14" electric fan and Derale adjustable fan thermostat.

I don't have a pic, but the car is in Benicia if you want to see it at some point. Its a pretty easy mod, pull the old setup off, gasket between the head and the temp sensor housing, another gasket between that and the outlet. You may or may not have to ovalize the bolt holes through both to get it to fit, but it can be done pretty easily. Assemble, torque to spec. I put a small bleed hole at the top of the outlet, but it might not be necessary since the 2L outlet is a better design vs the 1600 tower and will send coolant and air up to the radiator anyway.
