Without going too deep into the weeds, I need a wheel recommendation. 69 Roadster, stock height, but with the Volvo brake conversion. Car had some 15" Nissan waffle type wheels, presumably off some year Z. Went to put the wheels back on the chassis to roll it around the shop, and the wheels contact the face of the rotors. Bummer. Who has experience with this, or is there somewhere listed an OEM wheel chart that will fit our cars. I don't really want to spend a bunch, and might be inclined to go with stock steel wheels, assuming there is no brake interference problems, which again, I am unsure about...

I would bet they are hitting the caliper. Usually a 5 mm spacer does the trick.
Do you have vented or non vented rotors?

Yeah, calipers. That is what I meant to say. I am not attached to these wheels, and do not like spacers unless I have to, so I may go back to stock(wheels) or see what opportunities present.

You can go the thicker bearing spacer and thinner castellated nut that are used with vented rotors.
You can epoxy the spacer to the front hub

Yes. Very early on she picked white with blue racing stripes, though she has beeb waffling lately. Now she is thinking teal or silver. She has a couple months to decide... and not yet sure if we go sporty or classic look yet. Those wheels would look good...

I need to use spacers on my rear wheels 16x7 0 offset to get my tires away from my springs. 20mm is what I'm looking at. Anyone know where to get spacers that are 20mm that fit our cars? The widest Futofab spacers are 8mm. Maybe stick on three of them...

A machine shop can fab some up. Nothing magical. Fifth Gear used to have them here in town. You can find them on eBay like these:
