After 4 days of messing with it and some missteps I have the carbs on the car. My mid range stumble is now gone. Stock 1600 carbs just couldn't handle the stroker despite two changes to richer needles. Had to do the choke pull and also turn up the adjustment knobs to get rid of most of the stumble. It was simply too rich and had sooty plugs. Time for the Gunson now.
I think I would add a bullet list to the write up on how to do this even though almost all the info is there for those like me who are unfamiliar with 2000 SU. Had a geometry problem with the dog bone connector due to a locating mistake that made the pedal hard to push at first. Need to clean up some things now. Need a U20 short dog bone connector. Managed to find in my junk an adjustable one I could make short enough.
