SAE vs Metric

I'm doing a stroker build on R16 engine #78100, and keep seeing the references to SAE, and metric. Can someone give a clear explanation regarding the differences? Thanks Pat

SAE was used in the 3 main engines (prior to engine #25000). All later engines should be metric.
