A few questions: Can you make a tan seat cover instead of the regular black and red options? And do these require the original seat rails? Are they any other options for mounting if I don’t have the original rails?

Simon, I used these Corbeau seat rails in my '66. Very little modification. Great fit. there are many aftermarket types just like these that will fit. they are only about an inch in height:
