My '66 (was 1600) is running with the original radiator, rodded out and cleaned out, and my engine is a 2.3L turbo Ford, which has to make more heat than the stroker. Check A/F ratio, it is well known lean mixtures make an engine run hot.
Good luck and have fun with that stroker! Sounds like you have just about got it now.

Dang! How much HP does the 2.3L turbo engine make? Wouldn't be nice to swap a VG30DETT on a roadster! SWEET! Has anyone done this??? :D

I met a shop owner who specializes in swapping big engines into small vintage sports cars. I'll ask him if he's got technical plans for swapping a VG30DETT into a roadster. I think he's done that kind of swap on a 70's skyline gtr. He's even done a 1J-twin turbo swap on a vintage celica notchback... he's insane man! He told me that that celica had WHP200 ...not bad at all! :D

Yep, upgrade fuel delivery, then go to 18 psi.

I thought I would re-hijack the topic and let everyone know that I have not had a chance to work on the stroker. Maybe by the end of the week.

Sorry for the hijack, I didn't mean to derail the temp discussion. Just to add an additional tech point: I had a radiator cap fitting soldered to the top of my radiator when doing the engine swap. That center-mounted radiator cap has worked out quite well for me, but I had to lower the radiator about 3/4 inch to get some clearance under the hood.
