You pick your line with the steering wheel and hold it (more or less). Modulating the steering wheel instead of the throttle gives a slower exit speed, at least this is the coaching that I got. I don't poke at it as aggressively as he does though.

you got to remember that senna was from the era of turbo f1 cars. probably habit on his part. (nsx cars are not?? turboed)
