Random Roadster Questions

So I am now in possession of my new project. A 1969 1600.
I have a few questions.
1)There are plenty of interior parts needed repaired or replaced. Dash....Carpet......Seats upholstered...etc. Are Dashes available as well as most other parts? Are they in the Vendor sections?
2) Am I best to leave it stock? I would like to change the color and do some other stuff as well. Maybe a different engine....Fuel injected (My engine is good)?
3)All of my lights, trim minus one piece, bumpers, almost all chrome is in great shape. Are bumpers available or am i better off getting the ones I have with two small dents fixed and chromed?
Any help is greatly appreciated.

Interior trim and upholstery in available from the venders. The dash and it pieces will have to be redone and associated knobs and gauges are very limited. Many redo the dash to look like the early flat dash and some have gone to a modern look.

Stock usually has the highest return on investment, I prefer modified.

Bumpers and stainless are much less to repair/rechrome than replace. The original stuff is not of "show quality".

If you don't want to spend big bucks for a dash rehab the available dash covers look pretty good. If you are going for show car quality, then you'll need to budget $1500 or so for a dash recovering.

I would like to have a nice car that I can drive. It seems the show car quality is not something I'm looking for. Personally I like the modified models with the air scoop on the front. I will check into the dash covers as well as some new modern stuff. I appreciate the comments. Thanks everyone. There will be more.
