Hello: I am a proud brand new owner of a 67' 1600.
And, I am new to this site so pardon me for asking a question which I am sure has been answered before.
What is the best gas to use?

Welcome! Their are lots of questions that have been asked before, so a quick search may save you some time, otherwise ask away and someone will respond! For Gas, check pure-gas.org and look for ethanol free gas solutions. Octane or brand don't much matter to me as much as the avoidance of ethanol, and the havoc it can wreak on our older fuel systems - especially for cars that tend to sit more than daily drivers. Octane rating will matter based on your engine state and compression level, so that would require more information. In general choose the lowest octane that your car runs well on, you don't necessarily REQUIRE Premium.

Both of our cars, the '69 1600 and the '68 2000 run well on blend (mid grade) but since I've only been able to find "real gas" (not gasohol) in premium, that's what they drink.

Regular leaded was 95 octane ( around when these 311s were) you can hear extreme pinging , but not minor ping
The trouble with prem 91-2 octane now is it can be old
That MDE oxidizer used in the summer months is a cause of the problems , with gas today, if you leave it in the bowls

I know that others have reported problems with today's fuel, and I recently watched a TV show where a vintage '70's race car was damaged by long term storage with ethanol gas in it... but in 32 years of running a high performance U20 I have never had a single issue with fuel other than MAYBE boiling the fuel in the lines on a very hot day... no fuel line degradation problems, no carb problems, no ping or knock that was not directly related to my own issues (bumping compression to 11.7 to 1), nothing. Car lived in So Cal from 1989 to 1992 or so, then in Washington since. Granted the fuel is the summer blend only if that makes any difference (they have different blends in WA based on the time of year) but fuel has not been a concern for me.
As noted, regarding octane, it depends on what your engine requires, and premium fuel is a waste of money if your engine does not demand it to run without pinging.
